Classic Pumpkin Bread
By Our Recipe Contributor, Becky Spoolstra
This classic pumpkin bread will rival (and dare I say, beat?) what your favorite coffee shop offers. Enjoy it all year, but especially during the fall season of pumpkin flavored everything.
Ingredients
▪3.5 cups all-purpose flour
▪2 teaspoons baking soda
▪1 teaspoon cinnamon
▪1 teaspoon nutmeg
▪1.5 teaspoons salt
▪3 cups sugar
▪1 cup vegetable oil
▪4 large eggs
▪2/3 cup water
▪2 cups canned pumpkin
Directions
1. Preheat oven to 350 degrees F. Combine sugar, oil, and eggs in a bowl and mix together. Add all other ingredients and mix until combined but do not over mix.
2. Pour the batter into two 9x5x3 loaf pans. Bake for 60-80 minutes or until a toothpick comes out clean. Cool on wire racks until completely cool and wrap/cover to keep it fresh.
Notes:
Recipe makes two loaves but it’s very easy to half the recipe for just one loaf.
If you’re feeling naughty, a cream cheese drizzle on top or thin layer in the center would be delish!
